Berry Decadence (my favorite)

8 oz. frozen mixed berries (blueberries, raspberries and blackberries)
6 oz. nonfat sugar free plain yogurt
¼ cup All Bran cereal
1 tbsp. chopped walnuts for crunch and omega 3 fatty acids
1 tbsp. whey protein
Heat the frozen berries then stir in the yogurt, cereal and protein. Eat warm. It tastes like pie filing but is very healthy, with three of our favorite foods.

Low Fat Southwest Chicken Omelet

6 egg whites or Egg Beaters
½ chopped tomatoes, handful of mushrooms, onions to taste, 1cup red peppers
3 oz. lean turkey or chicken
1 oz. mozzarella cheese
extra-virgin olive oil
If the chicken or turkey is not pre-cooked, cook it first in a separate pan. Preheat the oven on broil to 450ºF. On a skillet on the stove, pour in the egg whites or Egg Beaters and start cooking at a medium temperature. After a minute or so mix in the vegetables together with the meat and cook until the eggs are as you like them. Turn off the stove. Put an ounce of mozzarella cheese on top of the omelet. Put in the over and bake the cheese for several minutes until lightly brown.

ACI Rainbow Omelet

4 eggs (DHA enhanced)
2 cups raw fresh spinach
1 cup raw fresh broccoli
½ each red and yellow peppers
garlic powder
extra-virgin olive oil
½ small avocado, sliced
1 oz. mozzarella cheese, shredded
Preheat the oven on broil to 450ºF. Sauté vegetables (do spinach separately) in small amounts of olive oil. Whisk eggs together and pour into an oven ready heated pan. As eggs become slightly firm place vegetables on top of eggs, put sliced avocado on top and then sprinkle on cheese. Turn off the stove. Put pan in oven and broil the omelet for several minutes until the cheese is lightly brown.
Serves two

Red, White and Blue Smoothie

½ to ¾ cup plain yogurt
2 tbsp. flax oil
1 tsp. Stevia (a natural sweetener)
½ Gala or Washington apple
¼ cup frozen strawberries
1 cup frozen blueberries
Mix ingredients in blender and serve chilled.
