Italian Tomatoes and Pork Chops

2 lean pork chops, fat cut away
salt, pepper, and garlic powder
1 14-oz. can S&W Italian stewed tomatoes
½ cup fresh mushrooms, sliced
Sprinkle the salt, pepper and garlic on the pork chops and place on top of the stewed tomatoes and mushrooms in a covered skillet on the stove and cook until done. It is amazing!
Serves one

JT’s grilled salmon or trout

1 3-oz. filet salmon or trout
lemon slices
½ red and yellow pepper
onions, to taste
lemon pepper
salt
Put the fish on top of the vegetables on the foil and wrap loosely and make a short tent to seal it. Place on barbeque or in oven and cook until done, about 20 minutes.

Dorie’s Truly Amazing Lamb, Beans and Rice

½ cup Mahatma long-grain rice
¼ tsp. salt
¼ tsp. pepper
½ tsp. cinnamon
12 oz. lean lamb (all fat cut away), chopped
½ small chopped onion
28 oz. diced tomatoes
¼ tsp pepper
2 cups fresh green beans
1 oz. feta cheese
1tbsp. olive oil
Place rice in 1 cup boiling water with salt, pepper, and cinnamon. Cook till tender. Sauté lamb and onion in olive oil till brown. Add diced tomatoes and pepper. Simmer about 15 minutes. Add green beans and simmer 5 minutes more. Serve lamb over rice. Top with feta cheese.
