Spinach Salad

2 cups fresh spinach
handful of walnuts
3 strawberries, sliced
1 hard-boiled egg, sliced
3 oz. turkey breast
½ avocado, sliced
2 tbsp. Paul Newman Low Calorie Balsamic Vinaigrette Dressing
Mix ingredients and serve.

Newport Beach Blueberry Chicken Salad

3 ounces of chicken breast
2 cups of mixed baby greens
5 cherry tomatoes
½ red bell peppers
handful of fresh blueberries
2 tbsp. of extra-virgin olive oil
3 tbsp. of freshly squeezed lemon juice
pinch of fresh garlic
Serves one
Calories – 275

Green and Wild

3 oz. Alaskan Wild Salmon
lemon pepper, to taste
salt, to taste
4 oz. cooked spinach
1 tbsp. olive oil
Grill salmon in over with spices, sauté spinach in olive oil. Serve together.

Veggie Sandwich

2 slices whole wheat bread
1 slice Jack cheese, cut in 4 pieces
3–4 spinach leaves
½ tomato, sliced
1 mild green chili, sliced
½ red bell pepper, julienned
¼ cucumber, sliced
Put veggies and cheese on bread, grill in George Foreman grill 4 or 5 minutes. Serve with cucumber garnish.
